Teas and how they are procssed

Oolong-In a class by itself

OOolong tea is harvested through a meticulous process that involves careful timing, skilled pickers, and specific techniques to ensure the highest quality leaves are selected.

Harvesting Process

Timing: Oolong tea is typically harvested in the spring and fall, depending on the region and specific variety. The timing is crucial as it affects the flavor profile of the tea. In high mountain regions, harvesting often begins at sunrise to avoid the moisture from dew, which can affect the quality of the leaves.

Dew Removal: In regions like Taiwan, a unique practice called "dew removal" is performed before harvesting. Skilled workers use bamboo brooms to gently shake off dew from the leaves, ensuring that the moisture does not interfere with the subsequent processing steps. This step is essential for maintaining the quality of the tea, especially in high-altitude areas where dew formation is significant.

Leaf Selection: The standard for picking oolong tea is to select the top two or three leaves and the bud, often referred to as "one bud, two leaves." This selection is made because these parts of the plant are the most tender and flavorful. The pickers must be skilled to ensure that they do not damage the leaves during the process.

Hand Harvesting: Oolong tea is usually harvested by hand, which allows for careful selection and minimizes damage to the leaves. This labor-intensive process requires a lot of skill and experience, as the pickers must work quickly to gather the leaves at their peak flavor.

Immediate Processing: Once harvested, the leaves are transported quickly to processing facilities where they undergo withering, rolling, and oxidation. The immediate processing helps preserve the freshness and flavor of the leaves.

Conclusion

The harvesting of oolong tea is a blend of art and science, requiring attention to detail and a deep understanding of the tea plant. The practices involved not only ensure the quality of the tea but also reflect the cultural heritage of tea cultivation in regions known for their oolong production. By following these meticulous steps, tea farmers can produce the rich and complex flavors that oolong tea is celebrated for.
